CHICKEN TIKKA BIRYANI

Ingredients:
*Marinating Chicken:
Chicken – 1& 1/2 kg
Yoghurt – 250 gms
Ginger Garlic Paste – 2 tbsp
Red Chilli Powder – 2 tbsp
Salt to taste
Cumin Powder – 1 tbsp
Black Pepper Powder – 1 tsp
Garam Masala Powder – 1 tbsp
Orange red food colour – 1/4 tsp
Oil to fry

*Boiling rice
Rice – 1 kg
Oil – 2 tbsp
Salt 3 tbsp
Water – 3 litre
Whole spices – cumin seeds – 2 tbsp
Bay leaves – 2 to 3
Black pepper – 1 tbsp

*Biryani Masala Preparation
Oil – 4 tbsp
Whole Spices – Caraway seeds – 1 tbsp
Cumin Seeds – 1 tbsp
Cinnamon – 2
Black Cardamom – 2
Black Pepper – 10
Bay leaves – 3
Star Anise – 1 or 2
Cloves – 6
Onions – 4
Ginger Garlic Paste – 2 tsp
Tomatoes – 4
Red Chilli Powder – 1 tbsp
Turmeric Powder – 1 tsp
Cumin Powder – 1 tsp
Garam Masala Powder – 1 tsp
Kasoori methi – 1 tbsp
Yoghurt – 150 gms
Salt to taste
Fried onions – 1 small cup
Mint leaves – 1 cup
Coriander leaves – 1 cup
Desi ghee – 3 tbsp
Yellow food colour soaked in milk – 4 tbsp
